This is such a quick and easy, yet super delicious salad to prepare. Putting a quinoa spin on a Mediterranean greek salad, it is packed full of protein, and perfect for hot summer days.

 

Ingredients

Quinoa

Vegetable stock

Mixed olives

Cucumber

Rocket

Extra Virgin Olive Oil

½ lemon

Feta cheese

 

 

Method

Measure 1 cup of quinoa to 2 cups of water

Depending on how many people you are serving, increase amount at a ratio of 1:2 (quinoa to water)

Add ½ a vegetable cube to boiling water

Place quinoa into a saucepan. Cover with the water and bring to the boil, adding a pinch of salt and pepper

Bring to simmer for 15 minutes as the quinoa cooks, intermittently stirring

Prepare the rest of the salad by slicing the feta and cucumber- portion size of your choice

 

Dressing

Prepare the dressing by mixing together 3 Tbsp olive oil, squeezing ½ lemon and a pinch of salt and pepper

Drain quinoa in a colander and run cold water over it

Add all salad ingredients into a bowl mixing them together with your hands to ensure ingredients are covered (add more to taste)
