The perfect meal if you wish to eat healthier during the christmas holidays

Cooking Time: 15 mins

Serving size: approx. 4 (depending on how hungry you are!)

Chopped onions - 1/4 CUP

Garlic - 2 cloves

Mixed Cherry Tomatoes - 1 cup

Halloumi

Balsamic vinaigrette

rye bread

basil - 1 handful

extra virgin olive oil

Method:

1.     Chop a cup of mixed cherry tomatoes into small pieces before adding into a large mixing bowl

2.     Slice Halloumi into thick pieces before cooking it in a heated pan of extra virgin olive oil

3.     Add ΒΌ cup of chopped onion and garlic into separate pan and allow to cook until slightly soft before adding it to mixing bowl

4.     Tear up basil leaves and add it to mixture

5.     Add 1 1/2 tablespoon of extra virgin olive oil and a dash of salt, pepper and mixed herbs before mixing all ingredients together

6.     Add (to taste) a pour of balsamic vinaigrette to mixture before mixing it all together

7.     Slice loaf of rye bread into thick pieces and toast/grill pieces ready for serving.

8.     Serve your toasted bread with halloumi and cherry tomato mixture.
