Cooking time: 20 mins

Serves 2

Ingredients:

1 can 400g tinned tomatoes with basil

½ onion

1 packet of fresh spaghetti

2 gloves garlic

King prawns

Squid rings

Herbs:

1 Tbsp mixed herbs

1 Tbsp coconut oil

1 Tbsp paprika

Handful of parsley- finely chopped

½ lemon

Parmasan cheese (optional)

Method:

 

1.     Boil pasta & drain for time as recommended on packet

2.     Fry finely diced onions and garlic in 1 Tbsp coconut oil for a few minutes on medium heat until soft

3.     Add the prawns & squid rings seasoning with the paprika and mixed herbs

4.     Cook for 5 mins, continuously stirring

5.     Stir in the tomatoes before bringing to boil

6.     Cover the pan, and turn the heat down to simmer for a further 5 mins

7.     Mix the sauce into the pasta and serve up, seasoning with parsley and a wedge of lemon (a touch of parmesan cheese is also delicious!)
