This is seriously as delicious as it looks! One of my favourite dinners packed full of protein, nutrients and fibre
Ingredients
1 Salmon fillet
2 Sweet potates
120g Krispy kale
approx 4-6 Stem broccoli
Β½ Lemon
1 Tbsp Chilli flakes
3 Tbsp Cajun spice
1 Tbsp mixed herbs
Coconut oil
2 Tbsp Olive oil - extra virgin
Method
1. Preheat oven to 180 deg
2. Wash, cut & boil sweet potatoes to soften for 10 mins
3. Dress sweet potato wedges in baking tray adding oil, mixed herbs, pepper and rock salt
4. Place baking try into oven for 20 mins, shaking the tray every 6-8 mins
5. Prep salmon in foil, dress with coconut oil (liquid form) before adding lots of cajun spice, mixed herbs and a squeeze of lemon. Kneed in the spices using your fingers thoroughly before folding foil into a parcel
6. Place the foil parcel into the middle shelf of the oven for 15 mins
7. Boil broccoli for 8-12 mins with Β½ Tbsp chilli flakes and Β½ Tbsp coconut oil
8. Add 1 packet of krispy kale to an oven tray, dress 2 Tbsp coconut oil & 2 Tbsp chilli flakes!
9. Place in the bottom shelf of the oven for 5 mins- no longer!! Its burns really easily
10. After 15 mins of baking the salmon, open the foil & bake the salmon for a further 5 mins until crispy (This is optional- if you want the salmon to remain moist, do not open the foil parcel)
11. Plate up salmon with delicious veggies and enjoy lovely people! It's honestly DELICIOUS and one of my favourite dinner options
